So this blog is starting to change from "The Gneitings" to .......Nicole's! No offense Dev but I'm pretty sure there has only been one author so far and I will willingly give up this kind of attention when we graduate into a different phase of life (when there are some kids involved). As you can see I have been doing some blog re-construction....and.....I still don't like it. Great! I did post a preview of our Christmas cards as the header! I have learned a lot though. I know how to change the font to any font you want instead of the boring options blogger gives you. HTML and I are best friends now. I have also figured out how to print your blog into a book...I think. That one could be a lie. Check out this website. So, anyways after a few hours of blog stocking I have realized that my blog is not interesting to anyone except my mother. The home-makers are getting more and more amazing these days! Check out pioneer woman and Amazing Amanda on my favorites. So to make it a little more exciting for everyone I am going to start posting the following:
Week 1 - Most recent Pittsburgh stories and updates
Week 2 - Most recent favorite recipes
Week 3 - Most recent craft, home construction or sewing projects
Week 4 - Most recent uplifting thought
Yes, I could be turning OCD and maybe it won't be anymore interesting but at least it won't be we did this, we did this, we did this, etc. Ok so I guess it will only be a little more interesting for those of you who are female. I'm going to try to keep to the schedule. I will still post short update with pictures every week.
This week I have had some serious success in the culinary aspect of my life. Yes, I got a genuine compliment from my husband...you know the ones that you dream for not just the normal "This is great...thanks," or "That was good thank you!" It was on a recipe that my mom gave me for get this.... PF Chang's Orange Peel Chicken. Yes, my mouth is watering. Here is goes:
PF Chang's - Orange Peel Chicken
Sauce:
1 tablespoon vegetable oil
2 tablespoons minced garlic
4 green onions, sliced
1 cup tomato sauce
1/2 cup water
1/4 cup sugar
2 tablespoons chili garlic sauce
1 tablespoon soy sauce
1/2 cup vegetable oil
4 skinless chicken breast fillets
1/2 cup cornstarch and salt
peel from 1/4 orange, julienned (into 1/8-inch-wide strips)
Prepare sauce by heating 1 tablespoon of oil in a medium saucepan over medium heat. Add minced garlic and sliced green onions. Add tomato sauce and water quickly before the garlic burns. Add sugar, chili garlic sauce, and soy sauce and bring to a boil. Simmer 5 to 6 minutes or until sauce thickens, then turn off the heat.
Prepare the chicken by heating 1/2 cup oil in a pan over medium heat. Slice chicken breast fillets into bit-sized pieces. Coat each piece of chicken with cornstarch and salt. Arrange coated chicken on a plate until all chicken is coated. When oil in the pan is hot, add about half of the chicken to the oil and cook for a couple minutes or until brown on one side, then flip the chicken over. When chicken is golden brown, remove the pieces to a rack or paper towels to drain. Repeat with the remaining chicken. When all of the chicken is cooked rinse the oil out of the pan with water and place it back on the stove to heat up.
When pan is hot again add cut up orange peel and chicken. Heat for 20 to 30 seconds or so, stirring gently. Add sauce to the pan and cook for about 2 minutes. Stir the dish a couple times but do it gently so you don't knock the coating off the chicken. Cook until the sauce thickens then serve with white or brown rice on the side.
Serves 3 to 4.
Nicole's notes:
I changed 2 tablespoons of minced garlic to 1
I substituted the chili garlic sauce for just chili seasoning (for $ reasons)
I doubled the soy sauce to 2 tablespoons
I would also like to emphasize that fact that the outside of the orange needs to be cut really really small no matter how annoying it is. Chewing chunks of orange is like washing your hair with body wash....no good.
I also only had 1 large, large chicken breast and it fed Dev and I perfectly
Well I hope you enjoy. It is really easy and tasted amazing! And if you were wondering why I have so much time on my hands and there hasn't been any pictures lately: My husband has been studying for about 11 hours a day and that doesn't include his classes. I miss my husband! But I get him back tomorrow!
